Brook has many times repeated how kind Sanji is, and that's really affected my view in this. As in, is Sanji being kind by acting dense, as we know he would never act like this normally.
I think the man is ignoring Pudding out of kindness, cuz usually he'd be frustrated when someone gets on his nerves (i.e. Pudding's evil self) and shouts at them to choose a side.

Black mainly denotes non-being, mystery, night, and anger.

Sanji is the best cook in the world.
